Traditional Pie Pecan Recipe
14-16 Ritz crackers
3 egg whites, well beaten
3/4 – 1 c sugar
2/3 c pecans ( 1 small can)
Pinch salt
1/2 t baking powder
1/2 t vanilla
1/2 t Knox Gelatin
1/2 pt. heavy cream
Cooking Instructions
Add baking powder to egg whites and beat until peaks form. Gradually add sugar, beating until glossy. Roll crackers fine and fold crackers, salt, vanilla, and nuts gently into egg whites. Grease 9″ pie pan well. Pour into pie pan and bake 25-30 min. at 325 degrees. Cool. Sprinkle 1/2 t gelatin over heavy cream and whip. Spread on crust. Top with shaved chocolate. Chill at least 5 hours before serving.
