Tasty BANANA NUT BREAD Recipe

Ingredients – Cooking instructions

3/4 c mashed fully ripe banana

1 box Pillsbury Date Bread or any of the following: Apricot Nut Bread Mix, Cranberry Nut Bread Mix, Blueberry Nut Bread Mix

Follow all package directions except reduce the amount of water called for to 1/2 cup. Add raisins, nuts, and/or candied fruits if you wish. Bake in greased and floured loaf pan at 350 degrees for 45-50 minutes.

PRUNE PLUM TART Recipe

to make this delicious treat…

the Tart Pastry

Ingredients

1 cup flour

1 egg yolk

1 T sugar

1/2 cup soft butter

Grated rind of 1 lemon

1/4 t salt

Ice water if needed

Sift the flour onto pastry board or into a bowl. Make a well in the center and put egg yolk, sugar, butter, lemon rind, and salt into it. Mix center ingredients into smooth paste, then work in the flour adding very little ice water if necessary to moisten the dough so that it can be gathered into a ball and cleans the board or bowl. Chill the dough for at least 1 hour before filling it.

Plum Filling

1 qt. fresh prune plums, 1 T lemon juice, 3/4 c sugar, 1 t cinnamon, 2 T butter, 1/2 c currant or other tart jelly (optional)

Line a 9″ pie plate with tart paste and flute the edges. Wash and dry plums, cut open to remove pits. Arrange plums, cut side up in a symmetrical pattern in bottom of crust. Sprinkle with sugar, lemon juice, and cinnamon. Dot with butter and bake at 350 degrees for 30-40 min., or until crust is lightly browned and fruit is tender. After pie is cool, pour melted jelly on top. Let set before serving.

Easy HONEY BUNS recipe

1 14 oz. package hot roll mix

1/3 cup butter

1/3 cup brown sugar

1/3 cup honey

2/3 cup flaked coconut

1/2 teaspoon ground cinnamon

Prepare hot roll mix according to package directions. Let rise. Cream butter and sugar; add honey and beat until well mixed. Add coconut. Roll dough to an 18″ x 12″ rectangle;  Spread with 1/8 of the honey mixture; sprinkle with cinnamon. Roll as for jelly roll, starting with the long edge. Pinch edge to seal. Cut into 1 Inch slices and place, cut side down, on a buttered baking sheet. Let rise. Press down the center of the buns with a spoon and fill each depression with 1 teaspoon of remaining honey mixture. Bake in 375 oven for 15 to 20 minutes or until golden brown. Remove from baking sheet while warm.

Makes 18 buns. (Wrap in foil and reheat in the morning)

the Easy Pie Crust Recipe

Preparing a good pie crust has become a something of a lost art. However, the recipe here for a sour cream pie crust changes that. It is trouble free, works with any filling, is easy to make, and can be prepared a month ahead and stored in the freezer.

1. First comes the flour. Using two kinds of cake and all purpose flour creates an appropriate balance. The light flour imparts flakiness, and a short crumb, and the sturdier flour provides a solid body and shape.

2. Next to consider are the butter and the shortening. Nothing contributes a better flavor or baking aroma than butter. It also helps brown the crust nicely. Vegetable shortening is, however, also necessary for the tender flakiness that is the hallmark of excellent pastry. The combination guarantees superb results.

3. Sour cream is another flavor enhancer and is the secret to a tender pie crust. Since it is acidic, it inhabits the formation of gluten, which makes the pastry tough.

4. Sugar and salt round out this ensemble of ingredients and lend flavor and color. Together the bring out the simple pastry taste, and the sugar also has caramelizing properties that gives a crust golden color.
