Honey Bran Muffin Gems recipe

1/2 cup honey

4 pineapple slices. well drained

6 maraschino cherries, well drained

2 tablespoons shortening

3 tablespoons sugar

1 egg

3/4 cup milk

1 cup bran flakes

1 cup sifted all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

Grease large muffin tins: place 2 teaspoons honey in bottom of each cup, Cut pineapple slices in to thirds and cherries in half, Place a piece of pineapple and cherry in the bottom of each muffin cup. Cream shortening and sugar: add egg and beat well. Stir in milk and then bran flakes. Sift flour, baking powder and salt together; add to bran mixture, mixing until just moistened.  Spoon over fruit in muffin cups. filling 2/3 full.  Bake in 425 oven for 20 minutes.

Makes 1 dozen.

Quick Honey Corn Muffins recipe

3/4 cup sifted flour

11/4 teaspoons baking powder

1/2 teaspoon salt

1/3 cup cornmeal

1/4 cup prepared diced apple

1/4 cup honey

1 egg, well beaten

1/3 cup milk

3 tablespoons shortening, melted

Sift flour once; measure, add baking powder and salt, and sift again Add cornmeal. Wash, pare, and dice apple. Combine egg, milk, honey and shortening. Add all at once to flour-cornmeal mixture, stirring only enough to dampen all flour. Fold in apple. Bake in well greased 2 inch muffin pan at 400 for 20 minutes, or until done

Makes 8 – 12 muffins

Simply the Best BANANA NUT BREAD Recipe

3/4 c mashed fully ripe banana

1 box Pillsbury Date Bread or any of the following: Apricot Nut Bread Mix, Cranberry Nut Bread Mix, Blueberry Nut Bread Mix

Follow all package directions except reduce the amount of water called for to 1/2 cup. Add raisins, nuts, and/or candied fruits if you wish. Bake in greased and floured loaf pan at 350 degrees for 45-50 minutes, simple, enjoy!
